Kiwi Mojitos

Any time I pick up a case of Kiwis, I know that at least a few of them will be saved to make a delicious mixed drink or fruity summer ice pop! A kiwi's unique tang and sweetness make it perfect to be used in a refreshing drink, whether juiced or blended.


For this recipe I just skinned and smashed up 3 or 4 Kiwis by hand in a bowl, and then pressed the smashed Kiwi into a strainer. I saved some half rounds of Kiwi to garnish my drinks to make this extraordinarily simple drink feel fancy!

The following recipe yields 2 Yummy Kiwi Mojitos!


Ingredients:

3 oz. White Rum

1 oz. Fresh Lime Juice

3 oz. Fresh Kiwi Juice

1 Tbsp. Simple Syrup

1/2 Cup Club Soda


Directions:

  1. The first step is to juice your lime and your Kiwi! You'll need about an ounce of Fresh Squeezed Lime Juice; I'm normally able to get this from one very juicy lime. For the Kiwi, you have a few options; blend by hand or in a blender, then strain the pulp out, or use an actual juicer. We prefer to use a juicer, but blending by hand is less to clean up afterwards, so it's totally your choice.

  2. Combine your Rum, Simple Syrup, Lime and Kiwi Juice in a shaker with a cup of ice. Shake for 15-20 seconds until the mixture is nice and cold!

  3. Pour into glasses of your choice and top with Club Soda (about 1/4 Cup per glass).

  4. Garnish with Kiwi and Lime slices.

Note: If you'd like to make your own Simple Syrup at home, just add 1 Cup of Water to a non-stick pan on Medium High Heat, and dissolve 1 Cup of granulated sugar into it. Stir and let it bubble until it reduces in size by at least 25%, and then put it aside on a different burner to let it cool. You will have plenty of extra simple syrup for this recipe and others that you want to try! Put your extra syrup in a Mason Jar and use it whenever you need it!
