Belgian Waffles

Breakfast has always been my favorite meal, with Breakfast for Dinner coming in at a close second. Breakfast brings people together, and it's a great excuse to make dessert-like magic in the kitchen without judgement.


If you take anything at all away from this post, I hope it is the knowledge that you do NOT need box mix, or to take a trip to IHOP, to get bakery quality waffles on your kitchen table.


In addition to the recipe below, I've put together a video so you can see it all done first hand!

Ingredients:

2 1/2 Cups All-Purpose Flour

3 Tbsp. Sugar

2 Tsp. Cinnamon (Optional)

1 Tbsp. Baking Powder

1/4 Tsp. Salt

2 Cups Milk of Your Choice (We usually use Almond or Cashew Milk)

2 Large Eggs, Separated

1 Tsp. Vanilla Extract

1/2 Cup Vegetable Oil

Chocolate Chips or Fresh Berries and Whipped Cream for serving!


Directions:

1. Pre-heat your waffle iron.

2. Crack your eggs, separating the Egg Yolks from the whites. Place the whites in their own medium-sized bowl. Leave aside.

3. Combine all the dry ingredients in a large bowl (Flour, Sugar, Cinnamon, Baking Powder and Salt).

4. Whisk the dry ingredients together until fully combined.

5. In a medium sized bowl, combine the Milk, 2 Egg Yolks from the eggs you separated, Vanilla Extract and the Vegetable Oil. Whisk together.

6. Pour the whisked liquids into your whisked dry ingredients and mix together just until there are no dry ingredients visible.

7. Take your bowl of egg whites and use a hand or electric mixer to beat until they reach stiff peaks. (They should go from liquid, to foamy, and then to stiff).

8. Once you have achieved stiff peaks with your egg whites, use a rubber/silicone spatula to gently fold the egg whites into your main batter. These egg whites are going to make the batter fluffy and airy, and will ensure that the waffles have a crispy exterior!

9. Spray your waffle iron with non-stick spray (I have a non-stick waffle iron, but I usually put a little non-stick spray just for the first few waffles). Pour about 1/2 Cup of batter on the iron, close it, and let it cook to perfection! (Should take 2-4 minutes for each waffle, and they are ready when they are in the golden-brown to brown range).

10. Serve with chocolate chips or fresh berries and maple syrup! Do NOT forget to add whipped cream for an extra something special!!
